Creamy Mango Chicken
One of my kid's favourite ways to eat chicken! Often requested here – I find this a lovely way to introduce some protein rich chicken into some of my more picky client's diets. Left over chciken can be shredded and whipped up into something a little sweet and creamy and less boring and bland.

Ingredients
- 2 Cup Left Over Cooked Chicken
- 10 tbsp Mayonnaise
- 1 tbsp Turmeric
- 1 tbsp Mango Chutney
- 1 Pinch Salt
Instructions
- Take your leftover chicken and shred it with a fork in a large bowl
- In another bowl add the mayo, garam masala, turmeric, mango chutney, and salt and stir together until combined well
- Add the shredded chicken to the bowl and mix well
- Serve as a filling for cassava wraps, lettuce wraps, jacket potatoes, or over rice
Notes
If you have no leftover chicken but want to use this recipe – poaching chicken breasts keeps them soft and moist and perfect to shred and mix.
