Omelette Pizza

A very easy quick nutritious meal which can be served for breakfast, lunch or dinner. Eggs are full of choline – which is brilliant for brain health!

Servings 2 People

Ingredients
  

  • 4 Eggs
  • 1/4 Red Bell Pepper
  • 1/4 Yellow Bell Pepper
  • 1/2 Cup Chopped Greens
  • 1/2 Cup Nitrate-free Paleo/ Organic Sausage Chopped into small pieces
  • 1 tbsp Avacado Oil
  • 1 Pinch Salt and Pepper

Instructions
 

  • Crack 2 eggs into a cup and whisk together with a fork
  • Add salt and pepper as desired
  • Heat a cast iron pan on low heat and place 1 tsp of avocado oil into the pan. Take a clean tea towel and smear the oil around the pan to coat it
  • Take your eggs and pour them into the pan – tipping the pan to swirl it around so that the egg mixture covers the pan
  • Turn up the heat to medium and at this point, leave this to cook until the egg starts to bubble and looks thick and not opaque
  • Take a spatula flip the omelette and cook the other side for a minute until it is cooked through – lay out toppings on a tray and let your child pick out how they’d like to top their ‘pizza’

Notes

Sometimes we add a sprinkle of Violife dairy free cheese as a treat.
