INGREDIENTS:

  • 1 cup of cassava flour
  • 1/3 cup of ghee not melted
  • 2-4 TBSP cold water
  • 1/2 tsp salt
  • 250g sausage meat – I bought organic from the farm with nothing added. You could open up some organic paleo sausages instead
  • 1/2 a large onion
  • 6 fresh sage leaves

Other things you will need:

  • A rolling pin 
  • Unbleached parchment 
  • A baking tray

    METHOD:
  1. Preheat your oven to 220C and then first make the pastry – take the flour and the solid ghee and just rub it together 
  2. Add the cold water and just bring it all together with hands
  3. When a forms a dough wrap in parchment and refrigerate for 30 mins
  4. Take out and roll out on parchment paper – knocking the sides in with a rolling pin to form a rectangle
  5. Blend the onion and sage leaves until fine
  6. Mix into the sausage meat, season and place this into the middle of the rolled out pastry in a long sausage 
  7. Use the parchment to wrap the pastry around the sausage meat. It may crack but I’m not a pro and it adds to the crispiness! 
  8. Cut in half then each half into half etc until you have around 12 little sausage rolls.
  9. Whisk one egg or use some dairy free milk to brush over the pastry and glaze it
  10. Place into oven for 20-25 mins
  11. Cool on a wire rack or just devour them!
