INGREDIENTS:
- 1 cup of cassava flour
- 1/3 cup of ghee not melted
- 2-4 TBSP cold water
- 1/2 tsp salt
- 250g sausage meat – I bought organic from the farm with nothing added. You could open up some organic paleo sausages instead
- 1/2 a large onion
- 6 fresh sage leaves
Other things you will need:
- A rolling pin
- Unbleached parchment
- A baking tray

METHOD:
- Preheat your oven to 220C and then first make the pastry – take the flour and the solid ghee and just rub it together
- Add the cold water and just bring it all together with hands
- When a forms a dough wrap in parchment and refrigerate for 30 mins
- Take out and roll out on parchment paper – knocking the sides in with a rolling pin to form a rectangle
- Blend the onion and sage leaves until fine
- Mix into the sausage meat, season and place this into the middle of the rolled out pastry in a long sausage
- Use the parchment to wrap the pastry around the sausage meat. It may crack but I’m not a pro and it adds to the crispiness!
- Cut in half then each half into half etc until you have around 12 little sausage rolls.
- Whisk one egg or use some dairy free milk to brush over the pastry and glaze it
- Place into oven for 20-25 mins
- Cool on a wire rack or just devour them!
